I would not eat any egg that has been sat on as after 24 hours the chicks starts to form and YUK!!

They wouldn't start to develop that quick would they?

Here is the thread to Stages in Chick Embryo Development

It states that on the 1st day this is what develops:

"First day
16 hours - first sign of resemblance to a chick embryo
18 hours - appearance of alimentary tract
20 hours - appearance of vertebral column
21 hours - beginning of nervous system
22 hours - beginning of head
24 hours - beginning of eye"

So at what week do you candle the eggs to know for certain they are fertile and will hatch

Bennets,

Usually candle on day 10, but there is no guarantee even if there is embryo development established, that the chick will make it out alive in the end of the incubation period.
