Will he help make his own lunch in the morning, that sometimes helps, getting the kids involved in the food decision making and food production line. Maybe, suspend the lunch box treats and privileges? One of my kids got caught throwing their lunch in a bin at primary school and got detention, they went hungry too that day and hopefully learnt a lesson, that a Vegemite and cheese sandwich with the crusts on was better than starvation. The old starving people in the 3rd world country doesn't work as they are happy to use their pocket money to post the unwanted lunches in the mail to them ;)

Good luck, get him involved with his lunches and meals in general, it often works miracles.

No, he does that too. He is a nearly 10yr old boy who at this age think they are as cool as a 21yr old or something. The teachers cant monitor them all the time, and even if they did see the kids throw it out they dont do anything apart from "get mad at them" (as my boy put it). and i know he like to play basketball or handball and will either bring all the food packed home again or throw it out so he can go and quickly play.
Dom knows all about the poor people and sends his toys, food and clothing all the time to relatives and people in Asia. Making him feel bad about food waste probably wont help as he does so much already. ;)


Anyways going to buy some zucchini this afternoon..... cant wait for that slice ! [smilie=thanks.gif]

My kids actually had to sit down in the lunch area and eat before they were allowed to play in primary school, so the teacher's monitored them. A sort of healthy lunch order one day a week was also good incentive or rather a bribe to eat their home lunches. They were lucky too that they also had to bring a piece of fresh fruit for play lunch and that had to be eaten before recess and they also had veggie gardens and cooking programs at primary school by the time they got to secondary school they developed good eating habits and also realised that if they didn't eat their brain didn't function and they got tired run down and sick.

How about a savoury muffin? Ham and cheese, mushroom and cheese, zucchini and cheese, bacon and corn, fetta, olives and sun dried tomatoes? You can make bite sized mini muffins.

Here is a basic muffin mix that can be used as a base for either sweet or savoury muffins.
Basic Muffin Mix

Makes 6

Ingredients:
2 1/2 cups self-raising flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup caster sugar
1 1/4 cups milk
1 egg, lightly beaten
90g butter, melted or 1/4 cup vegetable oil

Method:
Preheat oven to 180°C. Lightly grease a 6-hole non-stick muffin pan.
Sift flour into a large bowl. Add caster sugar and stir to combine. Make a well in the centre. Combine milk, egg, butter and coffee (see tip) in a jug. Pour milk mixture into the well. Using a large metal spoon, stir until just combined, don't over-mix.
Spoon mixture into muffin holes until three-quarters full. Bake for 25 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in pan for 1 minute. Turn out onto a wire rack to cool.

Thank you, kindly 52.gif H & H for the basic muffin recipe, I prefer using vegetable oil, the muffins keeps better. Parmesan and kalamata olive muffins are really tasty too!

the recipes you come out with H&H sound just delicious. yeah his school has all that too but doesn't monitor it very well and not very consistent with their rules... i could pack a whole lunch box of chocolate bars and he still wouldn't sit down and eat them. i will try the muffins though. a bit of variety sometimes helps........ sometimes !

tomorrows lunch is left over zucchini slice... i know he will eat that... he even packed a fork and napkin with it...LOL he is already waiting to eat it!



PP the slice was FANTASTIC !!! absolutely delicious ! i made a HUGE tray... 3x the amount suggested. everyone loved it !

That's great BFLF, I bet all the other kid's mouth's will be watering at lunch time...

Kids used to bring curry and sushi and even cabbage rolls to school for lunch, though cold cabbage rolls did smell [smilie=rlp_smilie_207.gif]

Really impressed with your culinary skills BFLF and and your son is taking leftovers for lunch.

Without [smilie=threadjacked.gif] as these are ways to use up all those fresh or frozen eggs for dinner and also the left overs can be recycled for lunches the next day here are some recipes that have been big hits with my kids.

Zucchini and Chorizo Slice

Ingredients:
3 zucchini, grated
1 red onion, finely sliced
1 carrot, grated
4 slices shortcut bacon, diced
2 cooked chorizo sausages, diced
1 cup grated tasty cheese
1/2 cup plain flour
3 eggs, lightly beaten
salt and pepper to taste

Method:
Preheat oven to 180°C. Line a slice tray with baking paper and set aside.
Place all ingredients in a bowl and mix until well combined.
Pour into slice tray and smooth the top with the back of a spoon.
Bake for 55-60 minutes.

Sweet Potato Frittata

Ingredients:
450g potatoes, peeled, sliced into 5mm thick rounds
450g sweet potato, sliced into 5mm thick rounds
Olive oil spray
1 tablespoon butter
1 tablespoon olive oil
1 leek, white part only, sliced
1 garlic clove, crushed
½ cup cream
6 eggs, lightly whisked
Salt and ground black pepper to taste
¼ cup finely grated parmesan

Method:
Preheat oven to 180°C. Line two baking trays with non-stick baking paper. Place sliced potatoes and sweet potatoes on prepared baking trays. Spray lightly with olive oil and bake for 15 minutes until tender.

Melt butter and oil in a large, heavy-based frying pan over medium-high. Add leeks and cook, stirring often, for 10 minutes or until the leeks are soft and golden. Add garlic and cook for another minute.

Spread leek mixture evenly over base of frypan, arrange potato slices in a layer and top with a layer of sweet potato.
Whisk the cream or milk and eggs together, then season with salt and pepper to taste. Pour egg mixture evenly over the vegetables and cook over low heat for 10-15 minutes or until egg mixture is almost set.

Preheat grill on medium. Sprinkle frittata with parmesan and cook under grill for 5 minutes or until the top is golden and the frittata is set. Set aside for 5 minutes.

To serve immediately, cut into wedges and serve with a green salad and crusty bread.

Bolognaise Rice Bake

Ingredients:
3 cups cooked rice
1/3 cup parmesan cheese, grated
4 eggs, lightly beaten
1 cup cheese, grated

Sauce
2 tbsp olive oil
1 onion, diced
2 cloves garlic, crushed
500g beef mince
2 tbsp tomato paste
1 can tomatoes, diced
1 tsp beef stock
1 cup water
2 grated carrots
2 grated zucchinis

Method:
Preheat oven to 180C. Grease and line a baking dish.
In a frying pan, heat the olive oil and fry the oil and garlic until soft.
Add the mince and cook until browned.
Stir in the tomato paste and cook for 2 mins. Add the tomatoes, stock and water.
Bring to the boil and simmer for 15 mins.
Stir in grated carrots and zucchinis.
While the sauce is simmering, combine the eggs and parmesan.
Add the cooked rice and the sauce and mix well.
Pour into the tin and sprinkle the grated cheese over the top.
Bake for 45 mins. Leave to stand for 10 minutes and cut into squares and serve with salad.
