We have Filipino friends, I don't know what it's called but they make this really yummy stuffed roast chook with hard boiled eggs, chorizo, bacon and pork.

honestly can say i have never had it . sounds Yum though ! i LOVE Filo food.

The time the eggs are laid are not consistent. It changed daily and sometimes on


Had an escapee again though... same chicken ! http://www.australianpoultryforum.com/viewtopic.php?f=6&t=21049 hmmmmm, am going to have to do some modifying of the door. For now the suspected escape route is just blocked by some wood until i have more time for building.

3 eggs today !!!! i can imagine all the eyes rolling as i am talking once again about EGGS !!! but if i could do back flips i would do them now knowing there is now 3 chickens laying !!! woohoo4

got 2 eggs somewhere between the hours of 8am-9am. and then when i came home at 3 there was another egg !!!

Great news BFLF.

I got 7 eggs today. Best count for at least a couple of months. Some of my older girls are laying again. All the Barnevelders, which is good as they stopped laying last. My younger girls are all taking a break though. :-?

Maybe it's a regional dish? Mum asked Rey for the recipe, she said it was a family secret, I found one on the SBS website.

Roast stuffed chicken recipe (Rellenong Manok)

Ingredients
1 whole (1.5 kg) chicken, deboned, skin and meat intact
2 tsp salt
½ tsp pepper
½ kg ground pork
1/3 cup sweet pickle relish, drained
1 cup grated queso de bola (Edam cheese)
5 eggs
1 tsp white sugar
1/4kg sweet ham, sliced into squares
140g smoky chorizo, chopped
1 cup raisins
140g bottle Kalamata olives, chopped
2 whole eggs, hard-boiled, peeled
1 small carrot, sliced into strips
12 cups chicken stock

Preparation
Reach inside the chicken cavity and scrape out the chicken meat, taking care not to tear the skin. In a bowl, rub chicken skin with half the salt and half the pepper. Set aside.

Chop the deboned chicken meat. In a large bowl, combine the chicken meat with ground pork, pickle relish, and queso de bola. Stir in the eggs and sugar, and season with the remaining salt and pepper. Mix well.

Add the ham, chorizo and its fat, raisins and olives. Mix untill combined. Taste test by frying a small amount of the meat mixture. Adjust seasoning if desired.

Spoon half of the meat mixture into the cavity. Insert the hard-boiled eggs and carrot strips into the center. Fill chicken with remaining meat mixture.

Sew the opening of the chicken securely. Place the stuffed chicken on a long piece of foil, breast-side up. Tucking under the legs, and the skin of the neck and wings to make an oval shape. You may add one or two more layers of aluminum foil.

Arrange the chicken in a large pot. Pour in the stock and simmer for 1 hour or until cooked through. Remove from heat and set aside to cool completely. You may chill it and sliced it thinely accompanied by salad or cold cuts.

Alternatively, preheat oven to 190°C. Place the stuffed chicken on a roasting pan, and brush with oil. Cover chicken loosely with foil and roast for 45 minutes. Remove foil and roast for a further 20-25 minutes or until golden brown.

I am sooooo excited to find 4 eggs !!! One egg away from the magic number !!!

Not going to bother photoing 4... they look just like all the others...LOL.

People in this house need to start eating eggs more !!!

I went out in the pitch black night to collect todays eggs.... after falling in HUGE holes and dust baths all over the pen that the chickens have created, i made my way to the usual nest box. because i couldn't see i had to just feel for eggs..... 1.....2......3......4.....then checked around a bit more...5 ... omg 5 ! yes 5.... did i count right... OMG YES 5 !!!!

We have hit the magic number !!! 5 out of 5 !!! super excited !
Really impressed and very proud of my hens...
one was heaps spotty too. soooo cute ! i know how can i egg be cute. but it was!

My son was soooo excited carrying them in too, that when he put them in a bowl to show everyone he cracked 2 of them.

So we made H&H suggestion of zucchini slice to use up some of our growing stash of eggs... was a huge hit ! Even my son loved it and he wouldn't usually even try something like that. (and if he did it would usually be spat back on the plate in less than a second) i tripled the recipe as i could just tell it would be a huge hit here for dinner with 5 adults and 1 kid. (everyone has slice for lunch tomorrow too !)i did use 3 different kinds of cheese though... adding extra flavour. ;)



Wow. 5 out of 5. I still cant believe they all made it this far. I love them soooooo much !!! I'm going to buy them a tub of their favourite treat. Mealworms. Just because i am proud of them and happy they are all happy healthy normal chickens. a_bravo.gif
