Your recipe sounds really yummy Danny boy. When I have some time I will make it with chicken though as I too don't know where to get guinea fowl. :)

I really like this post as I can pick up some really nice recipes and I like to entertain for dinner from time to time.

(Although my formal dining room is a hatchery at the moment :( )

sorry guys wasnt keeping an eye on this.
Ummmm we purchased thru a game mob cant remember their details anymore, but if you go into the valley anytime, that market place sometimes sells them or you maybe able to get them from Zarbells at Toorbul

we used to have guinea fowl. people complain about silkies being stupid, these birds give a whole new meaning to stupid :roll:
and the constant chattering they could drive u bonkers.

Layered Chicken and Apricot Terrine

8 bacon rashers
2 bay leaves

APRICOT FILLING
1/2 cup chopped dried apricots
1 cup (70g) stale breadcrumbs
1 stick celery chopped
2 tablesp pine nuts
2 teasp grated lemon rind
2 teasp curry powder
1 egg, lightly beaten
Combine all ingredients in bowl & mix well.

CHICKEN FILLING
500g Chicken breast fillets
1 small onion chopped
2 gloves garlic
2 tablesp sweet fruit chutney
1 egg, lightly beaten
Process chicken until finely minced, add onion, garlic, chutney and egg, process until well combined

Remove rind from bacon. Place bay leaves over base of microwave safe loaf pan (base measures 10cm x 20cm). Line base and sides with bacon, allowing ends to overhang dish. Press half apricot filling over the base, then press half the chicken filling over top, repeat layering. Fold overhanging bacon over top to cover. Cover loosely (with paper towel) , cook on high (100% power) 10 mins; drain away excess liquid. Turn terrine onto plate; cook uncovered further 4 mins or until cooked through. Stand 20 mins before serving. Can be served hot or cold.
