The elusive Chicken and Leek Pie from the story

CHICKEN AND LEEK PIE


500 g of chicken breast or thighs (diced smallish)
1 leek sliced (I cut in half then slice)
2 cups sliced mushrooms
1 tin cream of chicken soup
1 cup grated cheese
½ cup cream or 2 tblesp of sour cream
parsley ( fresh herbs) and cracked pepper
filo pastry


Brown chicken in fry pan with a little olive oil. Slice leek and put in pan with chicken and sautee until soft. Add mushrooms. Add chicken soup and heat through. Add cream, grated cheese herbs and cracked pepper to taste.

Spoon into casserole dish. Scrunch up each sheet of filo pastry fairly loosely (like it was paper of a tissue) and place around the top of the casserole until the chicken mixture is covered and bake in oven (180 degree) for about 30 mins or until golden brown.

a family favourite to use up surplus

vegetable slice

6eggs,beaten
1/4 cup oil
1/2 cup sr flour
seasoning to taste

to this mix add2 cups grated vegies (I use zucchini,choko and carrot)
diced onion
1 cup grated tasty cheese


put in ovenproof dish and cook at 180 degrees for about 35-40 mins

great served with salad or jacket potatoes
alternatives
for the omnivors---u can add chopped up ham or tuna is good too
for the vegans---sliced tomatoes on the bottom of the dish works well or u can add sliced mushrooms to the mix

My kids and hubby love my salmon quiche, this one has no actual base and is really easy to make. Its great cold the next day or to take on a picnic also..

375g tin pink salmon
1 onion finely diced
1 cup grated cheese
2 carrots grated
3 eggs whisked
1 cup milk
6 sayo biscuits crushed
Paprika

Preheat oven to 180 Deg

mix all ingediants together, pour into pie or quiche plate (i spray dish with canolla spray first) sprinkle top with paprika and bake for 1 hour or until set and golden on top

My mum always made this when i was growing up, it might sound a little howya going to some but i love it with tomato sauce spread on top once its cooked.

:-D Yes I was a chef once :lol: , used to make this at one of the restaurants I worked at, bit involved but well worth the effort
Guinea Fowl in Red Wine with Chestnuts,
Ingredients :

4 x Guinea fowl breasts
Stock:
30 ml Olive oil
2 x Guinea fowl carcasses
2 x Onions, roughly chopped
2 x Carrots, roughly chopped
1/2 bot full-bodied red wine
5 ml Juniper berries
1 x Bay leaf
Bouquet garni
To finish:
15 ml Olive oil
1/4 bot full-bodied red wine
300 ml Guinea fowl stock
30 ml Black treacle
1 x Bay leaf
225 gm Frozen chestnuts, defrosted
Salt and freshly ground black pepper
10 ml Arrowroot

Method :
First make the stock. Heat the oil in a large pan, add the guinea fowl carcasses and brown well. Add the onions and carrots and saute until lightly browned. Add 600 ml water and all the other stock ingredients.
Bring to the boil, lower the heat and simmer gently for about 3 hours.
Strain the stock into a bowl and allow to cool, Refrigerate when cold so that the fat sets on the surface. discard this fat layer before use. To cook the guinea fowl, heat the oil in a heavy-based frying pan over a medium-high heat. Add the guinea fowl breasts and brown on both sides. Add the wine, stock treacle, bay leaf, chestnuts and salt and pepper. Bring to the boil, lower the heat and simmer for 15 - 20 minutes. Mix the arrowroot to a paste with a little cold water. Remove the guinea fowl breasts from the pan and keep warm. Add the arrowroot paste to the sauce, stirring continuously. Cook, stirring, for 2 - 3 minutes.
To serve, slice the guinea fowl breasts and arrange on warmed individual serving plates with the chestnuts. Spoon over the sauce and serve at once.
